I am find that when searching metadata in this window it does not bring up a lot of my files with this Metadata. Is there something i can look at?

We don't have any particular dates at the moment.

The feature should be available in 6.4/6.5 release of OnePlaceMail.

Despite custom columns are not visible in the "Insert from SharePoint" window, it's possible to search for the values in these columns:

After internal discussion we've decided to implement this feature (Custom Views in the "Insert from SharePoint" window) in future releases of OnePlaceMail. I'll let you know about this feature availability.
